What is the best material for a hood?
Sunbrella treated with a waterproofer?
Cloth backed vinyl?
Other?

Most standard Mokes had black vinyl roofs. I expect the black vinyl was supplied by Nylex. They were a major Australian manufacturer of vinyl sheet materials etc, and they supplied the patterened vinyl that was used on Californians.
Nylex are no longer with us, but any reasonable quality black vinyl hooding material would probably do. The material used to make mine is normally used for covering ute and pick-up trays. There are a bunch of similar materials sold for marine upholstery or convertible hoods.

Whatever floats your boat! I expect that if you started out with white, it would be off-white pretty soon.
Have a look at what options there are for marine upholstery and canopies, pretty much any of those materials would be fine.
