What grade/configuration e.g. 5W-30 of you use in your Mini Moke?

Just use a decent brand 20W50 oil, change it at the recommended mileage intervals and you should be fine. BMC spent many many pounds in optimising the oil grades for the A series engine.
If you’re really worried why not fit an oil cooler? Just be sure to fit a thermostat in the system too.
